Having Breakfast at Keys? Save the Hash Browns!

I usually keep most of my posts to real estate and buying homes in the north and east Minneapolis/St Paul metro but I came across a photo of  potato soup made in a crock pot a few weeks ago that looked oh so good that I thought I might give it a try. The main ingredient was frozen hash browns…not a staple in our house. I love well made hash browns from restaurants but the ones from home are usually less than edible. So I kind of stored away the idea in my computer…because well, at this time of year the back of my head gets a bit full.

So a week or so ago we were having breakfast at Keys Cafe in Forest Lake. If you have ever ordered a Keys breakfast whether at the original restaurant in St Paul or one of the 8 other locations across the Twin Cities, you know you’d better be hungry. Their servings of hash browns are enough to feed most families for a week. Unfortunately, we are never THAT hungry and we usually just have to throw the leftovers out. (Reheated breakfast food falls in the inedible category too.)

This time we boxed the potatoes up, took them home and I found that online recipe. After reading the comments, I made a few changes to make sure there was sufficient flavor. We don’t like celery flavoring so switched it up with broccoli. It turned out fantastic! So give Keys a try…and bring home those hash browns as the secret ingredient for dinner tomorrow!

Cheesy Potato Broccoli Crockpot Soup Recipe

INGREDIENTS:
1 -32 oz package of frozen hash brown potatoes, thawed or frozen (add any leftovers from breakfast too)
1/2 cup fresh chopped onion
1 cup frozen broccoli
1-32oz carton chicken broth
1 cup water
3 tablespoons Gold Medal® all-purpose flour
1 cup milk
1 -8oz pkg shredded three cheddar blend with Philadelphia Cream Cheese flavoring (or any Cheddar blend)
1/4 cup real bacon pieces (from jar or homemade)
1/4 cup chopped green onions

DIRECTIONS:
1. In 3-4 quart crockpot or slow cooker, mix potatoes, onion, broccoli, broth and water.

2. Cover; cook on Low heat setting 4 to 5 hours.

3. In small bowl, mix flour into milk; stir into potato mixture. Increase heat setting to High. Cover; cook 20 minutes or until mixture thickens. Stir in cheese until melted. Garnish with shredded cheddar, bacon pieces, green onions and pepper.

The Good, the Bad & the Ugly of Buying a Minnesota Lakehome in the Winter

According to the calendar, winter just started but we all know from the chiropractic visits to tend to our aching, shoveling-afflicted spines that Minnesota’s winter weather blew into town several weeks ago. Unfortunately this means all that picturesque lakeshore that defines our beautiful state is frozen and covered with a thick white blanket of snow.
If you’re considering buying a lakeshore home, that just about cuts off any opportunity of buying for the year; that is unless you assess the quality of the lake using an ice auger and depth finder when freezing your backside off fishing on the ice. Right?
Well, not so fast. Buying a lakeshore home in the winter can make sense…And save lots of money too. If you know the specific lake well or are not concerned about the quality of shoreline, winter can be a great time to write up an offer.
GOOD reasons not to wait:
  1. Motivated Sellers—Any seller that keeps Minnesota lakeshore on the market during the winter most probably needs to sell.
  2. Less Competition—With few buyers on the market there is less change of multiple offers on properties which make for easier negotiations with the sellers.
  3. Low Interest Rates—They keep telling us that these rates won’t stay around forever and they are starting to inch up again. A lower interest rate means more buying power.
BAD  and UGLY situations that could arise:
  1. Shoreline Problems—That picturesque beauty that was covered with snow could reveal low lake levels or weedy shoreline problems rather than the sandy beachfront you imagined.
  2. Septic issues—If the home is on a lake with a private sewage system, it might not be able to be fully assessed for compliance issues which could be costly if a new system is required.
Bottom line, winter can be an tremendous opportunity to get a deal on a Minnesota lake home but be advised if you don’t know the lake well; there are significant risks to making a purchase when the lake is covered with a thick slab of ice. Weigh your options carefully before deciding whether you should put in an offer on that seemingly perfect snow covered home on the lake or wait until April when the waves are once again lapping on the shore to put in your offer.

But few know the legends that surround the lake and that Manitou Island is at the center of it all. The legend has been documented by several writers but the most notable was Mark Twain who wrote of the Indian warrior who killed the great monster of a polar bear to save himself and his lover in his book, “Life of the Mississippi”.

Year End 2009 Snapshot of White Bear Lake, MN Home Sales Statistics

Like most other communities in the north east Twin Cities metro, White Bear Lake has seen more closed sales but at lower prices in 2009 compared to 2008. In this Northern Ramsey County city home sales dropped just over 16%; that’s almost 30% over a two year period! Inventory levels are going down as there are just slightly less (4.1%) of new listings that came onto the market this past year. The average days-on-the-market statistic is down by 10% so homes are starting to sell faster in White Bear Lake. The bulk of sales has been in the lower price points as nearly 67% of all homes closed in 2009 were sold for less than $200,000. Another 27% were sold for prices in the $200,000-$300,000 range. Traditional sellers considering a move up in White Bear have an opportunity this year as there are so few starter homes but many higher valued homes to select from.
